ALAIN ALLEGRETTI, EXECUTIVE CHEF

Executive Chef Alain Allegretti’s professional experience relies heavily on classic French technique though his interest in the culinary profession began as a child when he grew up on a farm in Nice under Vietnamese and Italian parentage. A familial focus on local and seasonal ingredients with simple execution to expand upon natural flavor and texture laid the foundation for his eventual recognition as one of the most accomplished practitioners of Southern French cuisine.

In 2011 Allegretti opened Bistro La Promenade, formerly La Promenade des Anglais, which features a versatile menu in a casual bistro-style atmosphere. Located in the heart of Chelsea, Bistro La Promenade is within walking distance of the famed Highline and gallery district. Dishes rotate seasonally and each reflects Allegretti’s signature take on cuisine: that simple food can still surprise. The interior of Bistro La Promenade, by Brooklyn based Crème Design, provides a sexy and dynamic atmosphere for a casual dining experience. Bistro La Promenade has received critical acclaim from both New York City and international press, and Allegretti has appeared on numerous local and national television programs.

In Spring 2012, Allegretti and his partner LDV Hospitality opened Azure by Allegretti at the new Revel in Atlantic City. The Azure menu celebrates Allegretti’s roots as a seaside chef, with each dish featuring both French and Italian influences emblematic of the Riviera.
